Killer Crepes


Active Time: 30 Minutes  | Total Time: 30 minutes

Serves:  10 crepes


  • 1 1/2 cups all-purpose flour
  • 1/2 tsp salt
  • 1 tbsp tapioca flour
  • 2 1/2 cups water
  • 1 tbsp canola oil and more for cooking
  •  Fillings/toppings (e.g. maple syrup, bananas, milk-free dark chocolate, pie filling, jam, Nutriwhip, brown sugar, lactose-free margarine)


Sift the flour, salt and tapioca flour into a large bowl and whisk together. Add the water and oil, and whisk until well combined.

Heat a pan over medium heat and spread a very small amount of oil in it. Scoop 1/3 cup of the batter into the pan and quickly swirl it around to spread out the batter into a thin layer. Cook for 3 minutes or until bubbles appear, and then flip and cook for 1 more minute.

Lay the crepe on a plate and fold it in half. Finish the other crepes and then serve with desired fillings or toppings.
